Blueberry Ginger Sauce

Ingredients

2 cups fresh or frozen blueberries

1/4 cup water

1 cup orange juice

3/4 cup white sugar

1/4 cup cold water

2 tablespoons cornstarch

1/2 teaspoon dried ginger

 

directions

1. In a saucepan over medium heat, combine the blueberries, water, orange juice, dried ginger and sugar. Stir gently, and bring to a boil.

2. Mix together the cornstarch and 1/4 cup cold water. Stir the cornstarch mixture into the blueberries. Simmer gently until sauce thickens. Remove from heat and stir dried ginger. Thin sauce with water to preference

Yield: Makes 1 1/2 cups.
